{Food Friday} Shrimp & Veggie Stir-Fry

We do quite a bit of stir-fry dishes in our house and this is one of our favorites.
It's a super healthy and easy to make Shrimp & Veggie Stir-Fry.....
I'm always changing it up but here are the basics of how I usually do it.

Ingredients
I don't list exact amounts because the amounts should be chosen based on your taste and however much you have on hand of each ingredient.  Like most any stir-fry dish, this isn't an exact science....
Cooked Brown Rice
1 Egg
Shrimp
Onions & Peppers (Red & yellow bell peppers)
Veggies: use stuff you like, but we typically put in Peas, Carrots 
Olive Oil

1) Put peppers & onions in a skillet with heated olive oil (enough oil to cover the pan) and cook for about one minute
2) Throw in shrimp, brown rice & veggies / Toss that around cooking for a couple minutes
3) Add egg & continue stirring 
4) Once the egg and shrimp are both cooked add some salt & pepper and you're done!

*I cook everything on high heat until I add the egg.  Once I add the egg I turn it down to a medium heat.

*Before I add the egg I push everything else over to one side of the pan and put the egg on the other side and stir it around by itself for a few seconds and then stir it in with everything else.

Felicity loves this.  Also, my husband who normally doesn't eat hardly anything with veggies or peppers in it likes it, but he always adds soy sauce to his.

At first I wasn't sure how I felt about the new Facebook "Timeline" thing (I don't really like change).... but now that I have discovered how fun it is to customize my timeline with pretty headers or "covers" I am actually happy about these new changes.

Switching to a completely different subject.... 
I had to share another photo of Felicity with my little brother before his prom.
I can't believe my baby brother is old enough to go to prom... it just seems weird.  I'm still having a hard time getting used to the idea of him being able to drive.  It's odd to me that he can just drive himself over to my house anytime he wants.  I've always heard that the older you get the faster time seems to move and I definitely believe it.  Suddenly it seems like everyone I see has morphed into a stranger - at least 10 years older than they should be.  

It makes me stop and realize how quickly my baby girl will grow up and take off on her own.  I am reminded to take advantage of all the opportunities to really soak up every moment with her now.  

I know I may go to bed tonight...
then wake up "tomorrow" and take her to pick out her prom dress.
I shutter to think she may even be the one driving.

{Food Friday} Simple Roasted Cauliflower

Roasted cauliflower is one of those things I like to make about once a month or so.  I can't say it's my favorite thing in the world, but it's a healthy snack that I like to throw in the mix when I get tired of my standard afternoon snacks.  I'm always surprised by how many people I know that say they have never tried it.  Here's how I like to make it...
1) Toss cauliflower with olive oil in some kind of baking pan
2) Sprinkle with Salt & Pepper (if I have some garlic I usually throw a little bit in the pan as well... I put garlic in almost everything I cook)
3) Bake in a 400 degree oven for around 30 minutes

Diamonds Are a Girl's Best Friend....

I don't wear a lot of jewelry these days.  

Why?  
Because Felicity is obsessed with the stuff and goes nuts over it when I wear it, trying to rip all my precious bling off of me so she can put it on.

However, I still love my jewels and have found myself putting them here and there around my house to display.  I guess since I can't wear it, I like to at least have it out where I can see it.

 
At some point this rhinestone flower hair clip of mine has ended up clipped onto my antique music book on the mantle...
 I don't even remember when I put it there but love the little sparkle it adds to the vignette.

It's actually a brooch/hair clip that I shared with Felicity for her "One Year Old Pictures". I put it on a little headband that she wore with some of my pearls and the pics were gorgeous!

I have jewelry scattered all over the house in other places as well but unfortunately haven't had time to get any good pics yet, but  here are some awesome things I've come across via Pinterest that others have done with their bling...

Oh. MY. Did anyone else just hear me squeal with joy?!  I must have this in my bedroom or bathroom!!
